This Lemon Herb Quinoa Salad is a refreshing and nutritious dish that's perfect for a light lunch or as a side for your favorite main course. Packed with flavors and easy to prepare, it's a delicious way to incorporate more grains and vegetables into your diet.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint

  2. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper to make the dressing.
  3. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, feta cheese, parsley, and mint.
  4. Pour the dressing over the quinoa mixture and toss gently to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to blend. Serve cold or at room temperature.
