Spiced Pumpkin Coconut Soup

This Spiced Pumpkin Coconut Soup is a warm and comforting dish, perfect for chilly days. Combining earthy pumpkin with creamy coconut milk and warming spices, it's a delightful treat for your taste buds.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 3 cups pumpkin puree
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add garlic and ginger, cooking for another minute until fragrant.
