Spicy Korean Kimchi Pancakes

Kimchi Pancakes, known as Kimchi Jeon, are a popular Korean dish. They're crispy, slightly spicy, and full of umami flavors, making them a perfect snack or appetizer.

Ingredients:

  • 1 cup chopped kimchi (fermented cabbage)
  • 2 tablespoons kimchi juice
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1 egg
  • 1 tablespoon gochujang (Korean red pepper paste)
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Sesame seeds (optional, for garnish)
  • Soy sauce for dipping

Instructions:

  1. In a large bowl, combine chopped kimchi, kimchi juice, flour, water, egg, and gochujang. Mix well to form a batter.
  2. Add the chopped green onions to the batter and season with salt and pepper.
  3. Heat a tablespoon of vegetable oil in a non-stick skillet over medium-high heat.
  4. Pour a ladleful of the batter into the skillet, spreading it out to form a pancake about 1/4 inch thick.
  5. Cook for 3-4 minutes until the edges start to crisp and the bottom is golden brown.
  6. Flip the pancake and cook for another 3 minutes until fully cooked through.
  7. Transfer to a plate and garnish with sesame seeds, if desired.
  8. Repeat with the remaining batter, adding more oil as needed.
  9. Serve hot with soy sauce for dipping.
