Moroccan Spiced Vegetable Tagine

This Moroccan Spiced Vegetable Tagine is a fragrant and hearty dish, perfect for enjoying a blend of vibrant vegetables and warming spices. Enjoy with a side of fluffy couscous for a complete meal.

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 sweet potato, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1/2 cup vegetable broth
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until softened, about 5 minutes.
  2. Add cumin, coriander, cinnamon, ginger, and cayenne pepper, stirring for 1 minute until fragrant.
