Moroccan Spiced Vegetable Tagine

Ingredients:
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 sweet potato, diced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 1/2 cup vegetable broth
- Salt and black pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until softened, about 5 minutes.
- Add cumin, coriander, cinnamon, ginger, and cayenne pepper, stirring for 1 minute until fragrant.
- Stir in carrots, zucchini, red bell pepper, and sweet potato. Cook for 5 minutes to slightly soften the vegetables.
- Add diced tomatoes, chickpeas, and vegetable broth. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 20-25 minutes, or until the vegetables are tender.
- Season with salt and black pepper to taste. Stir in chopped cilantro before serving.
- Serve hot with couscous or your choice of grain.
