Vietnamese Caramelized Pork Belly

This Vietnamese Caramelized Pork Belly, known as 'Thit Kho', is a deliciously savory-sweet dish that's perfect for an adventurous dinner. The pork is slowly simmered to perfection, absorbing a rich and flavorful caramel sauce that's bursting with umami.

Ingredients:

  • 1 lb pork belly, cut into 1-inch slices
  • 3 tbsp sugar
  • 3 tbsp fish sauce
  • 1/4 cup coconut water
  • 3 cloves of garlic, minced
  • 1 shallot, thinly sliced
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 red chili, sliced (optional)
  • Steamed white rice, for serving
  • Chopped green onions, for garnish

Instructions:

  1. Heat the vegetable oil in a heavy-bottomed pot over medium heat.

  2. Add the sugar and cook until it melts and turns a golden caramel color.

  3. Add the pork belly to the pot and stir to coat with the caramel. Cook until the meat is browned.

  4. Add the garlic and shallot, stirring for another minute until fragrant.

  5. Pour in the fish sauce and coconut water, then bring to a simmer.

  6. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, stirring occasionally.

  7. Uncover, add the black pepper and optional chili, and let it cook for an additional 10-15 minutes, or until the sauce thickens.

  8. Remove from heat and serve immediately over steamed white rice, garnished with chopped green onions.
