Zaatar Roasted Cauliflower with Tahini Drizzle

Ingredients
- 1 large head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 2 tablespoons zaatar spice blend
- Salt and pepper to taste
- 1/4 cup tahini
- Juice of 1 lemon
- 2 tablespoons water
- 1 clove garlic, minced
- Chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, zaatar, salt, and pepper until evenly coated.
- Spread the cauliflower in a single layer on a baking sheet and roast for 25-30 minutes, or until golden and tender, turning once halfway through.
