Sweet Potato and Black Bean Quesadillas

Delight in the vibrant flavors of these Sweet Potato and Black Bean Quesadillas, a creative twist on a classic dish. Packed with nutrients and bold spices, this recipe offers a satisfying and unique meal for any time of day.

Ingredients:

  • 2 medium-sized sweet potatoes, peeled and cubed
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. Preheat your oven to 400°F (200°C). Place the sweet potato cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with smoked paprika, cumin, chili powder, salt, and pepper. Roast for 20-25 minutes until tender.
  2. In a large skillet, heat the remaining olive oil over medium heat. Add the red onion and bell pepper, cooking until softened, about 5 minutes. Stir in the black beans and roasted sweet potatoes.
  3. Lay out the flour tortillas and evenly distribute the sweet potato mixture onto one half of each tortilla. Top with shredded cheese and fold the tortillas in half.
  4. Wipe the skillet clean and return to medium heat. Cook each quesadilla for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  5. Slice into wedges and garnish with fresh cilantro. Serve with lime wedges on the side.
