Sweet Potato and Black Bean Quesadillas

Ingredients:
- 2 medium-sized sweet potatoes, peeled and cubed
- 1 can (15 oz) black beans, rinsed and drained
- 1 small red onion, diced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 8 flour tortillas
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions:
- Preheat your oven to 400°F (200°C). Place the sweet potato cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with smoked paprika, cumin, chili powder, salt, and pepper. Roast for 20-25 minutes until tender.
- In a large skillet, heat the remaining olive oil over medium heat. Add the red onion and bell pepper, cooking until softened, about 5 minutes. Stir in the black beans and roasted sweet potatoes.
- Lay out the flour tortillas and evenly distribute the sweet potato mixture onto one half of each tortilla. Top with shredded cheese and fold the tortillas in half.
- Wipe the skillet clean and return to medium heat. Cook each quesadilla for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
- Slice into wedges and garnish with fresh cilantro. Serve with lime wedges on the side.
