Spicy Mango Chicken Stir-Fry

Welcome to today's culinary adventure! This Spicy Mango Chicken Stir-Fry is a vibrant and flavorful dish that combines the sweetness of ripe mangoes with the heat of chili, creating a perfect harmony of tastes. It's quick to prepare, making it an ideal dinner option for busy weeknights.

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice or noodles, for serving

Instructions:

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the garlic and ginger and stir-fry for about 30 seconds until fragrant.
  3. Add the chicken strips to the pan and cook until they are golden brown and cooked through, about 5-7 minutes.
  4. Add the red and green bell peppers and stir-fry for another 3-4 minutes until they are slightly tender.
