Pistachio and Herb Encrusted Fish with Citrus Dressing

Ingredients
- 4 fish fillets (such as cod or tilapia)
- 1 cup pistachios, shelled and chopped
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- 1 teaspoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
Citrus Dressing
- 1/4 cup orange juice
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the chopped pistachios, parsley, dill, lemon zest, salt, and pepper.
- Brush each fish fillet with a thin layer of Dijon mustard.
- Press the pistachio and herb mixture onto the top of each fillet to form a crust.
- Place the fillets on the prepared baking sheet and drizzle with olive oil.
- Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- While the fish is baking, prepare the citrus dressing by whisking together the orange juice, lemon juice, honey, olive oil, salt, and pepper.
- Once the fish is done, drizzle with the citrus dressing and serve immediately with your choice of sides.
