Caramelized Onion and Blue Cheese Tart

Ingredients
- 1 sheet puff pastry, thawed
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 4 oz blue cheese, crumbled
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20 minutes until they are soft and caramelized.
- Add the balsamic vinegar and sugar to the onions, cooking for an additional 5 minutes until the mixture becomes sticky. Season with salt and pepper to taste.
- Roll out the puff pastry onto a baking sheet lined with parchment paper. Use a knife to lightly score a border around the edges of the pastry.
- Spread the caramelized onions over the pastry, keeping within the scored border.
- Evenly distribute the crumbled blue cheese over the onions. Sprinkle with fresh thyme leaves.
- Brush the edges of the pastry with the beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
- Allow to cool slightly before slicing and serving. Enjoy warm or at room temperature.
