Italian Stuffed Zucchini Boats

Ingredients
- 4 medium zucchini
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut each zucchini in half lengthwise and scoop out the flesh to create boats. Set aside the scooped-out flesh.
- Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until softened, about 3 minutes.
- Add the ground turkey and cook until browned. Stir in the reserved zucchini flesh, cherry tomatoes, Parmesan, oregano, basil, salt, and pepper. Cook for another 5 minutes.
- Place the zucchini boats in a baking dish and fill them with the turkey mixture.
- Pour marinara sauce over the stuffed zucchini and sprinkle with mozzarella cheese.
- Bake for 25-30 minutes, or until the zucchini is tender and the cheese is golden and bubbly.
- Garnish with fresh basil leaves before serving.
