Savory Greek Lemon Chicken and Orzo

Ingredients:
- 1 tablespoon olive oil
- 4 chicken thighs, bone-in, skin-on
- Salt and pepper to taste
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese
- Lemon slices for garnish
Instructions:
- Season chicken thighs with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add chicken thighs, skin-side down, and cook until golden brown, about 5 minutes. Flip and cook the other side for 5 minutes. Remove and set aside.
- In the same skillet, add the onion and garlic, sautéing until the onion is translucent.
- Add the orzo and cook, stirring frequently, until slightly toasted, about 2 minutes.
- Pour in the chicken broth and lemon juice, stirring to combine. Add the oregano and thyme.
- Return the chicken thighs to the skillet, nestling them into the orzo. Bring to a simmer, cover, and cook for 15-20 minutes until the chicken is cooked through and the orzo is tender.
- Stir in the Kalamata olives and fresh parsley. Adjust seasoning with salt and pepper if needed.
- Garnish with feta cheese and lemon slices before serving.
