Bulgur Stuffed Bell Peppers with Feta and Mint

Ingredients:
- 4 large bell peppers (red, yellow, or green)
- 1 cup bulgur wheat
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes.
- In a medium saucepan, bring the vegetable broth to a boil. Add the bulgur wheat, cover, and reduce heat to low. Cook for about 12 minutes, until the bulgur is tender and the liquid is absorbed. Remove from heat and let it cool slightly.
- In a large bowl, combine the cooled bulgur, cherry tomatoes, red onion, feta cheese, mint, parsley, olive oil, cumin, salt, and pepper. Mix well.
- Stuff each bell pepper with the bulgur mixture and place them in a baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and slightly charred.
