Lemon Herb Quinoa Salad

Introduction

Brighten up your day with a refreshing and wholesome Lemon Herb Quinoa Salad. Perfect as a light lunch or a side dish, this salad is packed with fresh herbs, vibrant veggies, and a zesty lemon dressing. It's both easy to make and deliciously satisfying!

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water has been absorbed. Remove from heat and let it cool.
