This vibrant and flavorful dish features tofu marinated in a tangy chimichurri sauce, then grilled to perfection. It's a refreshing and protein-packed option that's perfect for any meal.
Ingredients
- 1 block (14 oz) firm tofu, drained and pressed
- 1 cup fresh parsley, finely chopped
- 2 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 tablespoon lemon juice
Instructions
- Prepare the chimichurri: In a medium bowl, mix together parsley, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper.
- Marinate the tofu: Cut the tofu into 1/2 inch thick slices. Place the slices in a shallow dish and pour the chimichurri sauce over the tofu, ensuring all pieces are coated. Cover and marinate in the refrigerator for at least 1 hour.
- Preheat the grill: Heat your grill or grill pan to medium-high heat.
- Grill the tofu: Remove the tofu from the marinade, allowing excess sauce to drip off. Grill each slice for 4-5 minutes on each side, or until grill marks appear and the tofu is heated through.
- Serve: Drizzle with fresh lemon juice before serving. Enjoy your chimichurri marinated grilled tofu with a side of your choice.
