Coconut Curry Lentil Soup
This Coconut Curry Lentil Soup is a delightful twist on traditional lentil soups, offering a rich and creamy coconut base with aromatic spices. It's both comforting and nourishing.
Ingredients:
- 1 tablespoon coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
- Juice of 1 lime
Instructions:
- Heat coconut oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add garlic, ginger, curry powder, and ground cumin. Cook for another 2 minutes, stirring frequently.
- Stir in red lentils, coconut milk, vegetable broth, and diced tomatoes.
