Jamaican Jerk Shrimp Tacos with Pineapple Salsa
These Jamaican Jerk Shrimp Tacos are a vibrant and flavorful twist on the classic taco, perfect for a quick weeknight dinner or a lively weekend meal. The spicy jerk-marinated shrimp pairs wonderfully with a refreshing pineapple salsa.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons Jamaican jerk seasoning
- 2 tablespoons olive oil
- 8 small corn tortillas
- 1 cup diced pineapple
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with the jerk seasoning and olive oil. Allow to marinate for at least 15 minutes.
- While the shrimp is marinating, prepare the pineapple salsa by combining pineapple, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Set aside.
- Heat a grill pan or skillet over medium-high heat. Cook the shrimp for about 2-3 minutes per side, or until they are opaque and cooked through.
- Warm the tortillas in a dry skillet or microwave.
- Assemble the tacos by placing a few shrimp on each tortilla and topping with a spoonful of pineapple salsa. Serve immediately.
