Jamaican Jerk Shrimp Tacos with Pineapple Salsa

These Jamaican Jerk Shrimp Tacos are a vibrant and flavorful twist on the classic taco, perfect for a quick weeknight dinner or a lively weekend meal. The spicy jerk-marinated shrimp pairs wonderfully with a refreshing pineapple salsa.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Jamaican jerk seasoning
  • 2 tablespoons olive oil
  • 8 small corn tortillas
  • 1 cup diced pineapple
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the shrimp with the jerk seasoning and olive oil. Allow to marinate for at least 15 minutes.
  2. While the shrimp is marinating, prepare the pineapple salsa by combining pineapple, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Set aside.
  3. Heat a grill pan or skillet over medium-high heat. Cook the shrimp for about 2-3 minutes per side, or until they are opaque and cooked through.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Assemble the tacos by placing a few shrimp on each tortilla and topping with a spoonful of pineapple salsa. Serve immediately.
