Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed. Fluff with a fork and let it cool.
