Spicy Mango Chicken

This Spicy Mango Chicken is a delightful fusion of sweet mangoes and spicy chili, creating an exotic and flavorful dish perfect for any dinner table.

Ingredients:

  • 2 lbs of chicken thighs, cut into pieces
  • 2 ripe mangoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red chili, sliced (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and ginger, and sauté until translucent.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Stir in the cumin, coriander, and sliced chili, cooking for another 2 minutes.
  4. Add the diced mangoes and reduce the heat to low. Cover the skillet and let it simmer for about 15 minutes, until the chicken is cooked through and the sauce has thickened.
  5. Season with salt and pepper. Garnish with fresh cilantro before serving.
  6. Serve hot with steamed rice or naan for a complete meal.
