Turmeric Spiced Cauliflower and Quinoa Bowl

This delightful Turmeric Spiced Cauliflower and Quinoa Bowl is a nourishing and flavorful dish that's perfect for any meal. Packed with protein from quinoa and rich in antioxidants from turmeric, this bowl is as healthy as it is delicious.

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup toasted almonds, roughly chopped
  • 1/4 cup raisins
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Greek yogurt for serving (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, turmeric, cumin, paprika, salt, and pepper. Spread the florets evenly on the prepared baking sheet.
