Spicy Mango Quinoa Salad

Experience the vibrant flavors of this Spicy Mango Quinoa Salad, perfect for a refreshing lunch or dinner. Packed with nutrients and a little kick, it's both healthy and exciting.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse quinoa under cold water and drain. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is fluffy and water is absorbed.
