Spicy Korean Kimchi Pancakes
Kimchi Pancakes, known as Kimchi Jeon, are a popular Korean dish. They're crispy, slightly spicy, and full of umami flavors, making them a perfect snack or appetizer.
Ingredients:
- 1 cup chopped kimchi (fermented cabbage)
- 2 tablespoons kimchi juice
- 1 cup all-purpose flour
- 1/2 cup water
- 1 egg
- 1 tablespoon gochujang (Korean red pepper paste)
- 2 green onions, chopped
- Salt and pepper to taste
- Vegetable oil for frying
- Sesame seeds (optional, for garnish)
- Soy sauce for dipping
Instructions:
- In a large bowl, combine chopped kimchi, kimchi juice, flour, water, egg, and gochujang. Mix well to form a batter.
- Add the chopped green onions to the batter and season with salt and pepper.
- Heat a tablespoon of vegetable oil in a non-stick skillet over medium-high heat.
- Pour a ladleful of the batter into the skillet, spreading it out to form a pancake about 1/4 inch thick.
- Cook for 3-4 minutes until the edges start to crisp and the bottom is golden brown.
- Flip the pancake and cook for another 3 minutes until fully cooked through.
- Transfer to a plate and garnish with sesame seeds, if desired.
- Repeat with the remaining batter, adding more oil as needed.
- Serve hot with soy sauce for dipping.
