Spicy Mango Chicken Stir-Fry

Experience a burst of flavors with this Spicy Mango Chicken Stir-Fry. The sweetness of ripe mangoes combines perfectly with a hint of spice to create a dish that's both refreshing and tantalizing.

Ingredients

  • 1 lb chicken breast, thinly sliced
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp chili sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the sliced chicken and cook until it's lightly browned.
  2. Remove the chicken from the pan and set aside.
  3. In the same pan, add the onions, red bell pepper, and garlic. Sauté until the onions become translucent.
  4. Return the chicken to the pan, and add the soy sauce, chili sauce, salt, and pepper. Stir well to combine.
  5. Gently fold in the diced mango, and cook for another 2-3 minutes to let the flavors meld together.
  6. Garnish with fresh cilantro before serving.
  7. Serve hot over a bed of cooked rice.
