Coconut Curry Lentil Soup

This Coconut Curry Lentil Soup is a delightful twist on traditional lentil soups, offering a rich and creamy coconut base with aromatic spices. It's both comforting and nourishing.

Ingredients:

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 cup red lentils
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Juice of 1 lime

Instructions:

  1. Heat coconut oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add garlic, ginger, curry powder, and ground cumin. Cook for another 2 minutes, stirring frequently.
  3. Stir in red lentils, coconut milk, vegetable broth, and diced tomatoes.
  4. Bring to a boil, then reduce heat to simmer for 20-25 minutes or until lentils are tender.
  5. Season with salt and pepper to taste.
  6. Stir in lime juice before serving.
  7. Serve hot, garnish with fresh cilantro.
