Pistachio and Herb Encrusted Fish with Citrus Dressing

Experience a delightful blend of textures and flavors with this pistachio and herb encrusted fish. Paired with a zesty citrus dressing, this dish is a refreshing twist for your dinner table.

Ingredients

  • 4 fish fillets (such as cod or tilapia)
  • 1 cup pistachios, shelled and chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil

Citrus Dressing

  • 1/4 cup orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the chopped pistachios, parsley, dill, lemon zest, salt, and pepper.
  3. Brush each fish fillet with a thin layer of Dijon mustard.
  4. Press the pistachio and herb mixture onto the top of each fillet to form a crust.
  5. Place the fillets on the prepared baking sheet and drizzle with olive oil.
  6. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  7. While the fish is baking, prepare the citrus dressing by whisking together the orange juice, lemon juice, honey, olive oil, salt, and pepper.
  8. Once the fish is done, drizzle with the citrus dressing and serve immediately with your choice of sides.
