Ingredients:

  • 3 medium beets, peeled and cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1/4 cup fresh dill, chopped
  • 3 tablespoons feta cheese, crumbled
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the beet wedges on a baking sheet, drizzle with olive oil, and season with salt and pepper.
