Pistachio-Crusted Chicken with Pomegranate Molasses

This delightful dish features a savory chicken breast encrusted with crushed pistachios, paired beautifully with the tangy sweetness of pomegranate molasses. It's a unique and flavorful recipe that's sure to impress.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup unsalted pistachios, shelled and roughly chopped
  • 1/2 cup panko breadcrumbs
  • Salt and pepper, to taste
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/4 cup pomegranate molasses
  • Fresh parsley, chopped, for garnish
  • Arils from 1 pomegranate, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the chopped pistachios, panko breadcrumbs, salt, and pepper.
  3. Place the beaten eggs and flour in separate shallow bowls.
  4. Season the chicken breasts with salt and pepper.
  5. Coat each chicken breast in flour, shaking off any excess. Dip them in the eggs, then press into the pistachio mixture, ensuring they are fully coated.
  6. Heat the olive oil in a large skillet over medium heat. Sear each chicken breast for 2-3 minutes per side until golden brown.
