Spicy Mango and Avocado Salsa with Grilled Halloumi

This vibrant dish brings together a refreshing combination of spicy mango salsa and the unique taste of grilled halloumi. Perfect as a light meal or appetizer, it's an exciting way to enjoy these ingredients.

Ingredients

  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1 small jalapeño, finely chopped
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste
  • 8 ounces halloumi cheese, sliced
  • 1 tablespoon olive oil
  • Optional: lime wedges for serving

Instructions

  1. In a bowl, combine the diced mango, avocado, red onion, jalapeño, lime juice, fresh cilantro, salt, and pepper. Mix gently to avoid mashing the avocado. Set aside to allow the flavors to meld.

  2. Heat a grill pan over medium heat and lightly grease with olive oil.
