Italian Stuffed Zucchini Boats

Discover a delightful and satisfying meal with these Italian Stuffed Zucchini Boats. Filled with a savory mixture of ground turkey, tomatoes, and herbs, this dish is both healthy and flavorful.

Ingredients

  • 4 medium zucchini
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut each zucchini in half lengthwise and scoop out the flesh to create boats. Set aside the scooped-out flesh.
  3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until softened, about 3 minutes.
  4. Add the ground turkey and cook until browned. Stir in the reserved zucchini flesh, cherry tomatoes, Parmesan, oregano, basil, salt, and pepper. Cook for another 5 minutes.
  5. Place the zucchini boats in a baking dish and fill them with the turkey mixture.
  6. Pour marinara sauce over the stuffed zucchini and sprinkle with mozzarella cheese.
  7. Bake for 25-30 minutes, or until the zucchini is tender and the cheese is golden and bubbly.
  8. Garnish with fresh basil leaves before serving.
