Spicy Honey Garlic Shrimp Stir-Fry

Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp sriracha (adjust to taste)
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 green onions, chopped
- 1/2 tsp sesame oil
- Sesame seeds for garnish
- Salt and pepper to taste
Instructions:
- In a medium bowl, whisk together honey, soy sauce, sriracha, and minced garlic. Set aside.
- Heat olive oil in a large pan over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from pan and set aside.
- In the same pan, add bell pepper, broccoli, and carrot. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Return the shrimp to the pan and pour the honey garlic sauce over everything.
- Toss to coat the shrimp and vegetables evenly with the sauce. Cook for an additional 2 minutes until the sauce thickens slightly.
- Stir in the sesame oil and green onions. Season with salt and pepper to taste.
- Garnish with sesame seeds and serve hot over rice or noodles.
