Creamed Spinach
Ingredients
- spinach
- garlic
- parmesan
- heavy cream
- shallot
Instructions
1. Wash and cook 150g fresh spinach in a pot with a splash of water until wilted, about 2–3 minutes.
2. Drain well, squeeze out excess water, and roughly chop the spinach.
3. In a small pan, melt 10g butter over medium heat.
4. Add 25g finely chopped onion and cook until soft, about 3–4 minutes.
5. Stir in 1 minced garlic clove and cook for 30 seconds.
6. Add 7g flour, stir and cook for 1–2 minutes to form a roux.
7. Slowly whisk in 120ml whole milk and 30ml heavy cream, cook until thickened, 3–4 minutes.
8. Stir in the chopped spinach and cook another 2–3 minutes until heated through.
9. Season with salt and pepper to taste.
10. Optional: stir in 10g grated Parmesan until melted before serving.
