Collard Greens
Ingredients
- Collard greens
- bacon
- onion
- garlic
- chicken broth
- smoked ham hock or smoked turkey leg/wing
- pple cider vinegar
- brown sugar
- red pepper flakes
- black pepper
- salt
- sauce
Instructions
1. Wash 2 large bunches of collard greens thoroughly in several changes of cold water.
2. Remove the thick center stems from the collard greens.
3. Stack the collard leaves, roll them up, and slice them into about 1-inch-wide strips.
4. Chop 4 slices of bacon.
5. Dice 1 small onion.
6. Mince 3 cloves of garlic.
7. Cook the 4 chopped bacon slices in a large pot over medium heat until browned.
8. Add 1 diced small onion and cook for about 5 minutes.
9. Add 3 minced garlic cloves and cook for about 30 seconds.
10. Add 4 cups chicken broth.
11. Add 1 smoked ham hock or 1 smoked turkey leg or wing.
12. Add 1 tablespoon apple cider vinegar.
13. Add 1 teaspoon brown sugar.
14. Add 1/2 teaspoon red pepper flakes.
15. Add 1/2 teaspoon black pepper.
16. Bring the mixture to a simmer and cook for about 20 minutes.
17. Add the sliced collard greens a few handfuls at a time.
18. Cover the pot and simmer gently for 45 to 75 minutes, stirring occasionally.
19. Remove the smoked ham hock or turkey and pull off any usable meat.
20. Chop or shred the smoked meat and return it to the pot.
21. Taste the greens and broth and add salt as needed.
22. Add extra apple cider vinegar, hot sauce, or black pepper to taste if desired.
