Vietnamese Caramelized Pork Belly
Ingredients
- pork belly
- sugar
- fish sauce
- coconut water
- garlic
- shallot
- black pepper
- vegetable oil
- red chili (optional)
- steamed white rice
- green onions for garnish
Instructions
1. Cut 1 lb pork belly into 1-inch slices.
2. Mince 3 cloves garlic.
3. Thinly slice 1 shallot.
4. Slice 1 red chili (optional).
5. Chop green onions for garnish.
6. Heat 2 tbsp vegetable oil in a heavy-bottomed pot over medium heat.
7. Add 3 tbsp sugar and cook until melted and golden caramel in color.
8. Add 1 lb sliced pork belly and stir to coat with caramel.
9. Cook pork belly until browned, about 5-7 minutes.
10. Add 3 cloves minced garlic and 1 thinly sliced shallot.
11. Cook for 1 minute until fragrant.
12. Pour in 3 tbsp fish sauce and 1/4 cup coconut water.
13. Bring mixture to a simmer.
14. Reduce heat to low and cover the pot.
15. Simmer for 45 minutes, stirring occasionally.
16. Remove lid and add 1 tsp black pepper.
17. Add sliced red chili if using.
18. Cook uncovered for 10-15 minutes until sauce thickens.
19. Serve over steamed white rice.
20. Garnish with chopped green onions.
