Dates stuffed with Gorgonzola and wrapped in bacon
Ingredients
- Medjool dates
- Gorgonzola cheese
- bacon
- toothpicks
- honey
- chopped walnuts or pecans
- fresh cracked black pepper
Instructions
1. Preheat oven to 400°F (205°C)
2. Slice 12 Medjool dates lengthwise on one side and remove all pits
3. Stuff each of the 12 dates with approximately 1 teaspoon (7g) Gorgonzola cheese, using a total of 3 oz (85g)
4. Optionally add about 1 teaspoon chopped walnuts or pecans inside each date, using up to 2 tablespoons total
5. Cut 6 slices bacon in half to create 12 half-slices
6. Wrap each stuffed date with 1 half-slice of bacon
7. Secure each bacon-wrapped date with 1 toothpick
8. Place all 12 dates seam-side down on a parchment-lined baking sheet
9. Bake at 400°F (205°C) for 18-25 minutes
10. Turn the dates once after 10-12 minutes of baking
11. Continue baking until the bacon is browned and crisp
12. Remove from oven and let cool for 5 minutes
13. Optionally drizzle with 1 tablespoon honey
14. Optionally season with fresh cracked black pepper to taste
15. Serve warm
