Chicken Adobo
Ingredients
- chicken thighs and drumsticks
- soy sauce
- garlic
- neutral oil
- white vinegar
- water
- bay leaves
- whole black peppercorns
- brown sugar
- white rice
- green onions
- fried garlic
Instructions
1. Combine 2 drumsticks, 1 bone-in chicken thigh, 50 mL soy sauce, and 2 smashed garlic cloves in a bowl
2. Marinate for 30 minutes to 24 hours
3. Heat 2 tsp neutral oil in a Dutch oven or skillet over medium-high heat
4. Remove chicken from marinade and reserve the marinade
5. Brown chicken for 3-4 minutes per side
6. Add 2 more smashed garlic cloves and cook for 30 seconds
7. Add reserved marinade, 50 mL white vinegar, 100 mL water, 1 bay leaf, 1/2 tsp whole black peppercorns, and 1 tsp brown sugar (optional)
8. Do not stir for the first 5 minutes after adding the vinegar
9. Cover and simmer for 25 minutes
10. Uncover and simmer for 10-15 minutes until the sauce is reduced and glossy
11. Remove chicken from the pan (optional)
12. Reduce sauce further until slightly syrupy (optional)
13. Return chicken to the sauce and coat thoroughly (optional)
14. Serve over steamed white rice
15. Garnish with sliced green onions and/or fried garlic if desired
