Rustic Bread

Instructions

1. Add 350g warm water (100–104°F) to a large mixing bowl
2. Add 7g active dry yeast and stir lightly
3. Let yeast sit for 5–10 minutes until foamy
4. Add 500g bread flour to the bowl
5. Add 10g salt
6. Mix until a shaggy dough forms
7. Knead dough for 8–12 minutes until smooth and elastic
8. Cover bowl and let dough rise for 60–90 minutes until doubled in size
9. Gently fold or shape the dough into a round or oval loaf
10. Place dough onto a floured surface or parchment paper
11. Cover and let rise again for 30–45 minutes
12. Preheat oven to 465°F with a baking tray or Dutch oven inside
13. Place a tray with hot water in the oven for steam or spray water into oven walls
14. Score the top of the dough with a sharp knife
15. Bake at 465°F for 15 minutes with steam
16. Remove steam tray if using
17. Reduce oven temperature to 425°F and bake another 20–25 minutes until deep golden brown
18. Remove bread and cool for at least 45 minutes before slicing
