Ginger Garlic Honey Chicken
Ingredients
- chicken breasts (1 lb)
- honey
- soy sauce
- fresh ginger
- garlic
- olive oil
- Dijon mustard
- butter
- green onions
- vinegar or lemon juice
- sesame seeds
Instructions
1. Cut 2 chicken breasts (about 1 lb) into bite-size pieces
2. In a bowl mix marinade: 2 tbsp honey, 2 tbsp soy sauce, 1 tbsp grated fresh ginger, 2 cloves minced garlic, 1 tbsp olive oil, and optional 1 tsp vinegar or lemon juice
3. Add chicken to marinade and let sit for 30 minutes to 4 hours (or overnight for stronger flavor)
4. Before cooking, reserve 2 tbsp of unused marinade for sauce (or plan to boil used marinade later)
5. Heat 1 tbsp olive oil in a pan over medium-high heat
6. Remove chicken from marinade and cook for 5–7 minutes until browned and mostly cooked through
7. Add sauce mixture (reserved marinade plus 1 tbsp Dijon mustard) to the pan
8. Let sauce bubble and thicken for 2–3 minutes while stirring to coat chicken
9. Reduce heat to low and add 1 tbsp butter and 2–3 tbsp chopped green onions
10. Stir gently until butter melts and sauce becomes glossy
11. Optional: add a splash (1–2 tbsp) water if sauce is too thick
12. Taste and adjust with more honey (1 tsp at a time) or soy sauce (1 tsp at a time)
13. Optional: sprinkle sesame seeds on top before serving
14. Serve hot over rice, noodles, or bread
