Sushi rice

Instructions

1. Measure 1 cup sushi rice
2. Rinse 1 cup sushi rice under cold water until the water runs mostly clear (about 3–4 rinses)
3. Combine 1 cup sushi rice with 1¼ cups water in a pot
4. Let the rice and water sit for 10 minutes
5. Bring the pot with 1 cup sushi rice and 1¼ cups water to a boil
6. Cover and cook on low heat for 15 minutes
7. Turn off heat and let the rice steam covered for 10 minutes
8. Mix 2 tbsp rice vinegar, 1 tbsp sugar, and ¾ tsp salt in a small bowl until dissolved
9. Spread the cooked rice into a wide bowl
10. Gently fold the vinegar mixture (2 tbsp rice vinegar, 1 tbsp sugar, ¾ tsp salt) into the rice
11. Let the rice cool until slightly warm before using for sushi
