Rice Pudding

Instructions

1. Measure 1/2 cup short-grain rice
2. Measure 2 cups whole milk
3. Measure 1 cup water
4. Measure 1/8 teaspoon salt
5. Add rice, milk, water, and salt to saucepan
6. Bring mixture to a gentle simmer over medium heat
7. Reduce heat to low
8. Cook uncovered for 25–30 minutes
9. Stir every 2–3 minutes to prevent sticking
10. Cook until mixture is thick and creamy
11. Stir in 2 to 3 tablespoons sugar
12. Stir in 1/2 teaspoon vanilla extract
13. Stir in 1/4 teaspoon cinnamon if using
14. Add 1 tablespoon butter or 2 tablespoons cream if desired
15. Serve warm or chilled
