Roasted Leeks
Ingredients
- leeks
- olive oil
- salt
- black pepper
- garlic
- thyme
- cream
- parmesan cheese
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Trim the dark green tops and root ends from the leeks, keeping only the white and light green parts.
3. Slice the leeks lengthwise and rinse thoroughly to remove any dirt between layers.
4. Pat the leeks dry with a towel and place them on the baking sheet.
5. Drizzle olive oil over the leeks and season with salt, black pepper, minced garlic, and thyme.
6. Toss gently to coat evenly, then arrange the leeks cut side down.
7. Roast in the oven for 20 to 25 minutes, flipping halfway through, until tender and caramelized.
8. Remove from the oven and squeeze a bit of lemon juice over the top.
9. Sprinkle with freshly grated parmesan cheese before serving.
