Provencal-Style Roast Cherry Tomatoes

1. Heat olive oil in a pan over high heat.
2. Add cherry tomatoes and cook until they begin to burst.
3. Allow the tomato juices to reduce and emulsify with the olive oil.
4. Add garlic, thyme, and a bay leaf.
5. Continue cooking until tomatoes are wilted and breaking down.
6. Season with crystal salt.
7. Serve warm with fish or cooled on toast with tapenade.
