Beef Curry

1. Heat oil in a heavy pot and brown beef cubes on all sides, then remove and set aside.
2. Add onions to the pot and cook until golden brown.
3. Stir in garlic and ginger, cooking until fragrant.
4. Mix in curry powder and cook for 30 seconds to bloom the spices.
5. Add tomatoes and cook until they break down into a sauce.
6. Return beef to the pot, pour in beef stock, and bring to a simmer.
7. Cover and cook gently for 1.5–2 hours until beef is tender (or about 40 minutes in a pressure cooker).
8. Stir in coconut milk and potatoes if using, then simmer for another 20 minutes until potatoes are tender and sauce thickens.
9. Add garam masala and adjust seasoning with salt and pepper.
10. Garnish with fresh cilantro and serve with rice or bread.
