Garam Masala Chicken Thighs with Couscous
Ingredients
- couscous
- boneless skinless chicken thighs
- garam masala
- smoked paprika
- salt
- olive oil or ghee
- onion diced
- garlic minced
- chicken broth
- butter
- fresh cilantro or parsley chopped
- lemon wedges
Instructions
1. Pat chicken thighs dry and rub with garam masala, smoked paprika, and salt.
2. Heat olive oil or ghee in a skillet over medium-high heat, sear chicken thighs 4–5 minutes per side until golden and cooked through, then remove and rest.
3. Cut Garlic and Onion
4. In the same skillet, add onion and cook for 3 minutes until softened, then add garlic and cook 30 seconds more.
5. Add chicken broth to the pan, bring to a boil, stir in couscous and butter, remove from heat, cover, and let sit 5 minutes.
6. Fluff couscous with a fork, slice chicken, and serve over couscous with herbs and lemon wedges.
