Crispy Parmsean Potatoes

1. Boil the potatoes whole (with skin) in salted water for 15–20 minutes until fork-tender.
2. Drain and let them dry completely to help them crisp up.
3. Place potatoes on a parchment-lined baking sheet.
4. Gently smash each potato flat to about ½ inch thick using a cup or fork.
5. Drizzle with olive oil and sprinkle with minced garlic (or garlic powder), salt, and black pepper.
6. Add grated Parmesan and any optional herbs or spices (like thyme, paprika, or chili flakes).
7. Bake at 425°F (220°C) for 25–30 minutes until crispy and golden brown.
8. Top with extra Parmesan or herbs if desired and serve hot.
