Pork Verde Soup
Ingredients
- pork shoulder
- salt
- pepper
- olive oil
- yellow onion
- garlic
- tomatillo salsa
- diced green chiles
- chicken broth
- ground cumin
- oregano
- corn
- white beans
- cilantro
- sour cream
- avocado
- lime wedges
- tortilla strips
Instructions
1. Season pork with salt and pepper.
2. Heat olive oil in a large pot over medium-high heat.
3. Brown the pork on all sides and set aside.
4. Add diced onion to the pot and cook until soft, about 5 minutes.
5. Stir in minced garlic and cook for 1 more minute.
6. Return browned pork to the pot.
7. Add tomatillo salsa, diced green chiles, chicken broth, cumin, and oregano.
8. Bring to a boil, then reduce heat, cover, and simmer for 45–60 minutes until pork is tender.
9. Stir in corn and white beans and simmer for another 10–15 minutes.
10. Ladle soup into bowls and top with cilantro, sour cream, avocado, lime wedges, or tortilla strips if desired.
