Rosemary Bacon Gravy Poutine with Tater Tots

Instructions

1. Preheat oven and bake tater tots until golden and crispy.
2. Chop bacon and cook in a pan until crispy; remove and set aside, leaving the fat in the pan.
3. Sauté finely chopped onions and minced garlic in the bacon fat until soft.
4. Add chopped rosemary and cook for another minute.
5. Add 1 tablespoon of butter and 1 tablespoon of flour to the pan, stirring to make a roux.
6. Slowly whisk in beef stock to form a smooth gravy and simmer until thickened.
7. Add cooked bacon back into the gravy.
8. Place baked tater tots in a serving dish, pour hot gravy over the top.
9. Sprinkle cheese curds over the dish and optionally broil for 1-2 minutes to melt the cheese slightly before serving.
