Smoked Salmon & Asparagus Alfredo Pasta
Ingredients
- pasta
- smoked salmon
- asparagus
- garlic
- heavy cream
- Parmesan
- lemon
- pine nuts
- walnut oil
Instructions
1. Boil water and cook pasta according to package instructions.
2. While pasta cooks, trim and chop asparagus into bite-sized pieces.
3. In a pan, heat walnut oil over medium heat and sauté minced garlic for 30 seconds.
4. Add asparagus to the pan and cook until just tender, about 4-5 minutes.
5. Lower heat and pour in heavy cream, stirring to combine.
6. Add grated Parmesan and stir until melted into a smooth sauce.
7. Squeeze in juice from half a lemon and stir.
8. Gently fold in chopped smoked salmon and remove from heat.
9. Drain pasta and combine with the sauce.
10. Toast pine nuts in a dry pan until golden and sprinkle on top before serving.
