Chicken Breast Stuffed with Goat cheese, Figs, Rosemary & Garlic

1. Mix goat cheese, chopped figs (or fig jam), rosemary, and garlic.
2. Cut a deep pocket in each chicken breast and stuff with the goat cheese mixture.
3. Secure the stuffed chicken with toothpicks.
4. Sprinkle salt and pepper over the chicken.
5. Heat olive oil in a skillet over medium-high heat.
6. Sear the chicken for 3 minutes per side until golden brown.
7. Transfer skillet to a preheated oven at 375°F (190°C).
8. Bake for 15-20 minutes until the chicken reaches 165°F (75°C).
9. Simmer balsamic vinegar and honey over medium heat until reduced by half.
10. Drizzle balsamic glaze over the chicken and serve.
