French Steak Sauce
Ingredients
- 1 cup red wine
- 1/2 cup beef stock
- 2 tbsp unsalted butter
- 2 finely minced shallots
- 1 sprig thyme
- 1 bay leaf
- 1/2 tsp black peppercorns
- 1 tbsp demi-glace
- 1 tsp lemon juice (optional)
- salt to taste
Instructions
1. Melt 1 tbsp unsalted butter in a pan over medium heat.
2. Add 2 finely minced shallots and sauté until soft, about 2 minutes.
3. Pour in 1 cup red wine (preferably Bordeaux) and add 1 sprig thyme, 1 bay leaf, and 1/2 tsp black peppercorns.
4. Simmer until the liquid reduces by half, about 10 minutes.
5. Add 1/2 cup beef stock and continue reducing until slightly thickened, about 5 minutes.
6. Strain the sauce through a fine sieve to remove solids.
7. Return the sauce to low heat and whisk in 1 tbsp unsalted butter for a smooth, glossy finish.
8. Season with salt to taste and add 1 tsp lemon juice (optional for balance).
9. Serve warm over steak and enjoy a luxurious, Michelin-quality sauce.
