Peanut Butter Chicken

Instructions
1. Cook the Chicken: Heat oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden and fully cooked. Remove and set aside.
2. Sauté Aromatics: In the same skillet, sauté onion and garlic until soft and fragrant.
3. Make the Sauce: Reduce heat to low. Add coconut milk, peanut butter, soy sauce, honey, lime juice, ginger, and chili flakes. Stir until smooth and well combined.
4. Simmer: Return chicken to the skillet. Simmer in the sauce for 5-7 minutes, stirring occasionally, until the chicken is coated and heated through.
5. Garnish and Serve: Sprinkle with chopped cilantro and peanuts. Serve over steamed rice or noodles.
